The frigid town of Sapporo is known for its ramen noodles. There are two very narrow "alleys"
in town that are lined with ramen shops. These tiny shops (perhaps 10 or 12 feet on a side
with a small counter serving 6 or 7 people) are always hot and steamy because of the pots of
boiling water, providing a welcome respite from the cold wind outside. The noodles are boiled
and then the customer chooses broth and toppings. The pork above was tender enough to cut
with chopsticks.
